Turn leftover Fajitas into a low carb breakfast!

I love to find ways to use leftovers - I can't stand throwing out good food!

Leftover chicken, beef and shrimp fajitas make an excellent breakfast!  This morning I was cleaning out the fridge and found leftover fajitas from Friday night! I diced up all of the chicken, beef and shrimp and veggies and sautéed in sone olive oil for about 10 minutes.  Then I scrambled eggs and folded it all together, and added some shredded cheddar cheese.

The leftover Guacamole' I used for Avocado toast! (on Keto bread of course)  Easy and Keto friendly breakfast!  Enjoy!

Welcome back to Eat Well, Move, Be well!


A lot of things have changed since my last post back in 2019....mainly Covid 19 of course. 


During this time I lost a job, my field of Hotels/Hospitality basically decimated by the pandemic.  I took a job that wasn't the best fit for me, and finally was able to get back into the hotel industry as a regional Director of Sales for which I am very thankful.

During the time last spring and summer when I was unemployed and had a quite a bit of time on my hands it seemed like every few weeks someone I knew was diagnosed with Type 2 diabetes and I would receive calls from friends of friends suggesting they talk to me about the day to day lifestyle elements of the disease and how I have been able to stay off of insulin for 24 years.

Mundane things like grocery shopping, meal planning, reading and understanding labels and net carbs, how foods impact your blood sugar and why that is such an individual thing and the only way to learn is to eat, wait 1-2 hours and test, keep a food diary and learn how your body reacts to each and every thing you consume, learning the best exercises for your body and your lifestyle, etc...

After coaching and helping many people, I have decided to start helping people (part time) as much as I can.  I started researching rates and I was astounded to learn health coaches make anywhere from $50-$75 per hour.  I knew right away most average people couldn't afford that, and I want to help people with this insane disease as much as I can - so I am offering consulting services starting at $25 per hour.  

This can be a one hour zoom call or a two hour consult at the grocery store.  This can be me coming to your home and going through your pantry and fridge and helping you get rid of the non-diabetic friendly items. We can sit down and plan menus for a week, wherever you are struggling with your new diagnosis, I can help you and teach you what has worked for me for the past 24 years.
